=================== [INDONESIAN]Resep Rawon (untuk 4-5 porsi)

Bahan:
500 gr daging sapi sengkel
2 batang serai, geprek, potong
2 lembar daun salam
5 lembar daun jeruk
1 buah tomat merah
1,5 liter air
¾ sdm garam
2 sdt kaldu bubuk / penyedap
1,5 sdm gula pasir
½ sdt merica
1 batang daun bawang, potong

Bahan bumbu halus:
6 siung bawang putih
10 siung bawang merah
5 buah keluak
4 butir kemiri sangrai
3 cm kunyit
50 ml minyak goreng
50 ml air

Bahan sambal:
20 buah cabai rawit merah
3 siung bawang putih
50 ml air
¼ sdt garam
½ sdt gula pasir
¼ sdt kaldu bubuk / penyedap
Minyak secukupnya

Pelengkap:
Telur asin
Bawang goreng
Jeruk nipis
Kecambah

Langkah:
1. Haluskan bawang putih, bawang merah, kemiri, keluak, kunyit, dan minyak kemudian masukkan air, blender kembali hingga halus
2. Tumis bumbu halus di api sedang kecil hingga keluar minyak lalu masukkan serai, daun jeruk dan daun salam, tumis hingga wangi
3. Masukkan air, masak hingga mendidih lalu pindahkan ke dalam presto
4. Masukkan daging, tomat merah, daun bawang, garam, kaldu bubuk, merica, dan gula pasir, presto selama 60 menit
5. Untuk sambal, masukkan cabai rawit merah dan bawang putih ke dalam food processor, haluskan
6. Panaskan sedikit minyak, tumis cabai rawit sesaat lalu masukkan air, garam, gula pasir, dan kaldu bubuk, masak hingga menyusut, sisihkan
7. Susun rawon di dalam mangkuk, tambahkan telur asin, kecambah, jeruk nipis, sambal, dan bawang goreng
8. Rawon siap disajikan

Ingredients:
500 g beef shank
2 pc lemongrass, pounded, sliced
2 pc bay leaf
5 pc kaffir lime leaf
1 pc red tomato
1.5 L water
¾ tbsp salt
2 tsp stock powder / MSG
1.5 tbsp sugar
½ tsp pepper
1 pc green onion, sliced

Blended Spices ingredients:
6 clove garlic
10 pc shallot
5 pc keluak
4 pc toasted candlenut
3 cm turmeric
50 ml oil
50 ml water

Sambal ingredients:
20 pc red Thai chili
3 clove garlic
50 ml water
¼ tsp salt
½ tsp sugar
¼ tsp stock powder / MSG
Oil, as needed

Add-ons:
Salted egg
Fried shallot
Lime
Bean sprout

Steps:
1. Blend the garlic, shallots, candlenuts, keluak, turmeric, and oil. Add water and blend smoothly.
2. Sauté the blended spices on medium-low heat until oily. Then, add lemongrass, kaffir lime leaf, and bay leaf. Sauté until fragrant.
3. Add water. Bring to a boil, then transfer into the pressure cooker.
4. Add meat, red tomato, green onions, salt, stock powder, pepper, and sugar. Cook for 60 minutes.
5. For the Sambal, chop the Thai chili and garlic with a food processor.
6. Heat some oil and sauté the chopped chili for a moment. Then, add water, salt, sugar, and stock powder. Cook until the water is reduced and set aside.
7. Assemble the ingredients in a bowl. Add salted egg, bean sprouts, lime, Sambal, and fried shallots.
8. Rawon is ready to serve.
