mac + cheese using j kenzi alt’s technique ~
I’ve been really into making mac & cheese lately and have been trying different cooking methods. This one is pretty well known from @kenjilopezalt
He basically uses just enough water to cover the pasta and cooks it down so the starch can concentrate and create a really velvety sauce. Then add evaporated milk, reduce the heat and gradually add in your choice of cheese. The measurements are equal in weight for the pasta, evaporated milk and cheese. It ended up being really cheesy and was very quick to make!
