The 50 Day Dry Aged Brisket Sandwich #weberad

After nearly 2 months of excitement, we finally took on our dry aged brisket… with the help of my @GrillwithWeber Summit Kamado S6 charcoal grill.
Not only was this one of the best briskets I’ve ever experienced, but even after 10 hours of cooking, the dry age flavor was still very apparent.

With the fat cap pointed down (always face towards the heat source) it smoked for 5 hours unwrapped, 5 hours wrapped in butchers paper, followed by a 2 hour rest once 205F internal was reached.

Paired with coleslaw, BBQ sauce, and homemade smoked buns, this was the hardest I’ve ever worked for a sandwich. And it was well worth it!
