After the flourishing summer season in April, again the time has come for the nature to dress the trees beautifully, in various colourful fruits everywhere. Luscious fruits such as Durian ,Mangosteen, Rambutan and succulent Mangoes covering the air with sweet fragrances. The small Durian tree in our elder aunty’s garden has already showing off its fruits so proudly. Since i asked few fruits from my elder aunty in advance, she has sent me a massage to come and pick some fresh Durian as they have started falling on to the ground.

When Durian becomes ripe, the fruit split and open up from the front side. Once this happens, it releases such a yummy sweet fragrance to the air. Some dislikes this pungent fragrance. Since I wanted about two fruits to be used later, I picked two half ripe ones too. If Durian has come to the correct ripen stage, there will be a hollow sound when tapped which means those fruits are about to fall on to the ground.

I got this exciting idea of making a marshmallow pudding with a subtle Durian taste coming with every bite. First I added rose water with a mixture of dried cranberries, golden raisins and dried strawberry pieces to the bottom layer. The bottom layer got a very beautiful rose pink color because of the cranberries and the strawberries in combining with the liquid. Then I mixed the top layer with the Durian mixed cream, incorporated with cashews, almonds, pumpkin seeds and pistachios. Then I garnished the top layer with dried pieces of blackcurrants and cranberries. Yes it looked heavenly. Finally I immersed the pudding in a cold water bath for about 2 hours to set it.

For lunch I made a Durian seeds tempered fry (Devill) as I never throw Durian seeds. After scraping off the flesh out of the seed, I steamed the seeds for few minutes because if the Durian seeds are boiled, once the skin is been removed, they crumbled up into a powdered consistency. So its important to get them steamed. I cut the seeds into small pieces and tempered them with freshly picked home grown Turkey berries and red ball chillies(Nai miris). As an exotic fruit Durian have the tendency to increase the body heat but its seeds has an cooling effect. As per our traditional methods, the over night soaked Durian seed water balances the increased body heat. I mainly tempered the Durian seeds because of this nutritional facts of the seeds.

By tea time, my marshmallow pudding was perfectly set. Even brother had made a yummy hot drink with chocolate powder and coffee mixed with sweet condensed milk. I was not so amazed to notice that he had mixed Durian also to his fantastic hot beverage because those days he couldn’t even stand the pungent fragrance of this exotic and nutritious fruit, but now he love it.

I felt such a proud sense of belonging and vowed to be a part of an extremely determined historical and strong cavalier human civilisation that has paid such deep concern of the hunger of the world population and that stood so proud as a flourishing agricultural nation. Truly Wishing an end to the current difficult and suffering crisis very soon.
