Gundruck is probably the most popular and loved food in Nepal. It is very authentic to Nepal and enjoyed by all ethnic communities in Nepal from terai, hills to mountains. It is dried fermented leafy vegetables, made generally from mustard green leaves (rayo ko saag), radish leaves (mula ko saag), cauliflower leaves ( Kauli ko paat ). It is one of the famous foods in Nepal. It can be made as a Curry or as Achar.

It is served as a side dish with the main meal and is also used as an appetizer. Gundruk is an important source of minerals particularly during the off-season when the diet consists of mostly starchy tubers and maize which tend to be low in minerals.

Ingredients for: Gundruk Aloo Bhatmas Curry

1 cup or 2 Handful Gundruk
1/4 cup Soybeans
2 medium size Onion
4 potatoes
1 tsp chilli powder
2 dry chilli
2 tsp Garlic/ Ginger paste
3 medium size chopped tomatoes
1 tsp Cumin seeds
1/2 tsp Turmeric powder
1 tsp Coriander powder

Pure Mustard Oil (or any vegetable oil)
Salt to taste
