Chicken & Rice 😍
Vinaigrette:
3 lemons juice and zest
2 Tbsp vinegar
1/4 cup olive oil
Pinch of salt
1 Tbsp Dijon (I used alcohol free)
Optional: garlic
4 chicken legs with 1/2 the Vinaigrette
1 tsp sazon and lemon pepper (season to preference)
Oven bake at 375F for 30-40 minutes until 170 infernal
Rice:
2 cups preferred grained rice
Follow the liquid amount for the rice with chicken stock
2 Tbsp butter
1/2 tsp saffron bloomed In hot water
Salt to taste (1-2 tsp)
Salad:
2 Persian cucumbers
1 tomato
1/2 shallot
1 jalapeño
Cilantro and mint to taste
Salt to taste ( I did 1 tsp)
Finish with a bit of the vinaigrette on the salad and top it off for a zing 😇
