Sushi Rice Recipe:
2 1/4 cups sushi rice
2 1/4 cups of water

Sushi seasoning: boil all ingredients and then cool down with kombu placed in.
1/2 cup rice vinegar
1 tbsp + 1 tsp sea salt
1/2 tbsp mirin
4 tbsp granulated sugar
1-inch piece of kombu

Butter emulsion:
1 1/2 tbsp water
1 pound of cold butter cut into small cubes
4 lobster tails
