INGREDIENTS:
🔹 Extra virgin olive oil (I used Early Harvest Greek EVOO)
🔹 1 green bell pepper cored and thinly sliced
🔹 1 orange bell pepper cored and thinly sliced
🔹 1 red bell pepper cored and thinly sliced
🔹 1 medium red onion halved then thinly sliced
🔹 Salt and black pepper
🔹 Spices of your choice I used 2 teaspoon za’atar blend, 1 teaspoon ground cumin and 1 teaspoon Aleppo chili pepper
🔹 6 large eggs
🔹 Chopped fresh parsley a large handful
🔹 1 Roma tomato diced
🔹 Crumbled feta a small bit to your liking (optional)
